At Paraíso 92, the visionary Wilton Benítez transforms coffee into an art form. Nestled in the lush landscapes of Cauca, Colombia, his farm has become a place where science and passion intertwine - every cherry hand-harvested, every detail carefully orchestrated to elevate the cup beyond expectation. Through meticulous selection by size and density, and gentle sterilization with ozonated and ultraviolet light, only the most pristine fruit continues on its journey.

The red bourbon is a symphony of controlled fermentations and sensory precision. Using a cultivated yeast (Saccharomyces pastorianus) and reintroducing mucilage and natural grain juice during a two-phase process, Benítez coaxes out layers of delicate sweetness and floral depth. Washed and gently dried for 48 hours at 38°C, the result is an evocative cup - radiant with raspberry, green grape, and rose water - a vibrant expression of Paraíso 92’s signature elegance and innovation.
